While previous studies have found that some of the ingredients of gazpacho – tomato, cucumber, garlic and olive oil are linked to lower blood pressure, this one showed the link to not just the combined ingredients, but that salt was included.

This was unexpected, because cutting out the salt has always been the first line of defence when blood pressure is high.

The researchers thought that the effect of the other ingredients would offset the salt’s effect, but this wasn’t proven.

(Maybe there is some synergistic effect) who knows?

In any case – 27% reduction in overall blood pressure is a pretty significant correlation.
